Beaver Clan Mexican Chocolate (Adult Only)

Delicious dessert recipe.

2 Dark chocolate bar  ( I use a godiva / so it is not as sweet or you can use Baker’s semi sweet) I always keep shavings aside for garnish. 

Whole milk ½ Gallon

1 cup half and half

1/2 cup Kaluha

1 cup RumChata 

In a large heavy saucepan , over low heat , add milk and half and half , shave the chocolate bars and stir constantly until chocolate melts. I use a wire whisk. 

Once heated thoroughly , slowly add the Kaluha and RumChata, whisking so it does not curdle.

 

Serve with whipped cream, and shaved chocolate.  ( great for after dinner)

Chico’s Cranberry Jam

Here’s an actual recipe and family favorite 🥰

Cranberry Jam
Ingredients
1 (12 ounce) package fresh cranberries
1/2 cup white sugar
1 cup apricot jam
Just a sprinkle each of: Cinnamon, cloves, allspice

Directions
• Preheat an oven to 350 degrees
• Combine cranberries with sugar and spices in a 2 quart baking dish with a lid, stirring well to coat all the berries. Bake in the preheated oven, covered, for about 30 minutes, until the cranberries pop and release their liquid
• Remove from oven and stir in the apricot jam. Refrigerate overnight to blend the flavors.

Beaver Clan Con Queso

This recipe I memorized from 38 years ago. Made every Holiday and for family gatherings.

I never write it down, but for the Tribe I am.

Queen of the Beaver Clan / @QueenOfTheBeav1

1 2lb. Box of Velveeta

1 stick butter

1 can Campbell’s Chicken Gumbo Soup

2 cups finely chopped celery 

1 finely chopped medium sized onion

16 oz frozen Hot Hatch green chile thawed and drained ( our particular preference)  or you can use canned chopped green chile, and use preference for mild or hot.

Garlic salt to taste

Tortilla chips ( get plenty they go fast)

 

Saute in butter, celery and onion. Over a lower medium heat and stir occasionally ( usually 15 minutes)

Add the chicken gumbo soup ( do not dilute with water)

Add green chile 

Block cube the Velveeta and turn on low heat, stirring constantly to prevent sticking or scorching.

Garlic salt to taste.

This feeds an army, you can transfer to a crock pot and keep on warm. 

Refrigerate any leftovers and it is very easy to warm up in the microwave.

(I use it for Huevos Rancheros vs melted cheese, or fry up potatoes and pour over for high calorie happiness)

Not the typical Turkey Day Feast.

We lost a beloved Uncle a few years back due to complications of his service in Vietnam. His diet during his last few remaining years that he spent with us was strict and one of his favorites was my Goose and Nudes. It ended up being a favorite for even my super bratty nieces & nephews!

Goose N Nudes : 

2-4 Goose Breast 

2 onions

1 glove of Garlic

Olive Oil or butter

Mushrooms

salt N pepper 

Chicken Stock

1 pkg of Brown gravy 

Mushroom Soup Slop 

Egg Nudes (noodles) 

 

Instructions:

Cube goose breast, throw in your olive oil into hot pan- gotta sear those suckers first! then add in your onion, garlic salt & pepper. let that shit simmer.

Next- you’re gonna pop open your pressure cooker and fill that pup up with that chicken stock and another onion, diced!

By that time- meat should be ready to transfer into the Happy Pot. Throw it in there and cook on medium High until the meat is broke down. Cook time depends. A pressure cooker usually does the trick in half the amount of time it would take a slow cooker to do- but I don’t use those -so… to each their own. 3 hours

 

Gravy:

Follow the Instructions. Throw the two together- an add more mushrooms- ( I personally hate them, but if they float on your tastebuds- hell, there yah go)  

An lastly, I forgot to tell you to Make the noodles. I’m pretty sure it came before the Gravy Train. But it’s okay. Shit happens, Right?

This is an old Pennsylvania recipe that goes back in my family to Victorian times.  It replaces cranberry sauce. It is light and bright and cold and cleans the palate. I have always had it on my table for my entire life.

4 c fresh cranberries

2.5 c water

2c sugar

1/2 c fresh orange juice

1/4 c fresh lemon juice

1 rounded tap unflavored gelatin dissolved in 1/2 c cold water.

 

Foley Food Mill

 

Cook berries in water until all have popped.  Out thru food mill in batches.  Take your time. Scrape the bottom of the sieve, go the other direction etc.  It is important to extract all the pulp and juice, not the skins. Once done, add the sugar to the cranberry mixture and boil, stirring until sugar is dissolved. Off heat add the juices and gelatin and stir until mixed. Freeze in a 9×12 plastic container with a lid. I like it better, more spread out rather than an 8×8. Remove just before eating. Scoop into small ramekins. It melts so enjoy it in between bites. Keep in the freezer while eating. Very different.

Grandma’s Simple Salad Recipe

My family is a traditional American unit. At our Thanksgiving gatherings we always served tukey and fresh venison meat as part of our menu.

As a side dish, Grandma Vivien made a simple  salad.  She took a head of iceberg lettuce tore it up in chunk size pieces these she would put into a large mixing bowl.  Grandma would then measure 1 cup of Mayonnaise and a 1/2 cup of whole fresh milk.  She would then whisk these two ingredients together.  Grandma then poured this mixture on top of lettuce,using two forks she would mix well.  Grandma would then slice a hard boiled egg using slices as a garnish on top of salad mix.  Paprika was always sprinkled on top for a festive look.  The bowl of salad fixings would then be placed on dinner table to be served up.  This recipe has been handed down in my family since the Great 1929 depression era.

Joker’s Bear Ribs

Joker “Bear Ribs”  ( Cabin in the woods recipe interpretation by Queen Beav)

Ingredients:
  1.       One lost California Tourist looking for the” Yellow Stone” ranch.
  2.       Two Grande Starbuck Soy Lattes for lost tourist bait (or Pumpkin Spice if available)
  3.       One full picnic basket (Yogi method) 
  4.       Duct tape or twine (to calm down tourist)
  5.       One bottle of Macallan 25-year-old reserve
  6.       One big ass gun
  7.       1 dead Bear
  8.       All the spices you own (use generously)
  9.       1 gallon tabasco sauce
Directions:

Ingredients 1-3, not necessary but adds Yellow Stone experience. (Self-explanatory and utilization of imagination. Personal preference.)

Ingredient 4, optional but could be useful.

Ingredient 5 self-explanatory as well. Generous pours do not use ice. Repeat as necessary, especially when skinning and processing the dead bear.

Ingredient 6   DUH

If still sober: release tourist ( optional)

Take Bear ribs, throw in a pot, dump all spices you own on top, add a gallon of tabasco sauce.

Cook the living crap out of them over medium heat for 1 day. Skim nasty grease off the top of the pot occasionally. Dispose in a coffee can and bury.

If still sober, repeat ingredient 5

 Wait on the porch of the cabin for someone who likes bear ribs. ( back up option) Force feed the tourist ” bear ribs” if not released.

I love smoking meat, and part of my families tradition is me spending Thanksgiving out in the back with my smoking cabinet.  It’s my lab, and I did this variation on a brine that is now on deck for this year’s feast.

Michigan Cherry Smoked Turkey

Humanzees have a tradition of gathering around the fire pit while papa Mighty Humanzee smokes the feast.  I started smoking meat a few years ago, and part of our rebellion against the COVID lockdowns was to have family and friends over for brunch while we prepped for the afternoon meal.  Smoking the turkey became my task, and always wanting to be the rebel, in 2020 we had brunch outside by the fire pit while I tended the smoker.  BIG CARBON FOOTPRINT.  Fire kept us warm, smoker kept me busy.  I’ll let you in on a secret:  being the one who delivers a delicious turkey makes you the hero, and keeps you out of the Thanksgiving political spats.

Smoking turkeys can take some time, the duration based on the weight, temperature you can get in the cabinet on a cold day.  And yeah, it’s very steam punk as you can see the side-car has to be feed every hour with you wood chips and charcoal.  By the end of the day you smell like a smoke pit grease ball, but the result is so worth it.  It’s my outdoor lab with only one rule “Meat Is Truth”.

The most important component to you meat fest is how you prep the flesh.  In that past I just used hickory wood chips and a salt brine combination.  Tasted good but I learned to branch out.  As I said, this is my lab, I love to experiment, mostly because I hate following formulas.  I have a good friend who also smokes meat, and he comments that “I can’t follow your madness”.  So it dawned on me that we needed alcohol to flavor the bird.  Michigan is famous for cherry wine, and this is my brand of Michigan Cherry Smoke Turkey.   I don’t do things in a small way, so we have two turkeys that we sacrifice, and I’ll throw in brats or boneless prime rib for a snack until turkey time.  6-8 hours of work and The Mighty Humanzee needs to feast along the way.

Here’s the rough recipe per Turkey, It’s all to taste.

2 Bottles of Cherry Win

12 CupsWater

3/4 Cup Salt

1/3 CupBrown Sugar

2 Apples, quartered

2 Onions, quartered

3 Garlic Cloves, peeled & smashed

3/4 ounce (or one small bunch) Rosemary

3/4 ounce (or one small bunch) Thyme

3/4 ounce (or one small bunch) Sage

1 Tablespoon PeppercornS
